Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Pretty average for a Chipotle, but I can say the service here is really friendly and brown rice was just added to the menu. I'm a fan.

Really though, who doesn't love this Colorado native? Yeah sure it's a chain, but it's damn tasty, has huge portions and is really well priced (not to mention healthy for "Mexican" food).

I have only been to one other Chipotle, and that one I go to quite frequently. It's good to see that the winning formula of my fav fast food joint in Seattle works here in Fort Collins as well. Stopped here on my road trip because I was sick of crappy unfamiliar road food and I wanted something I know is good. They did not dissapoint. Make sure you get the chips with guac. Chips are limey! Nice!

I am addicted to the classic burrito w/ guac. Like, literally, addicted. It should come with a surgeon's general warning. Good food at a really good price. Don't forget your student ID!

Eww, McDonald's does Mexican. These poor Fort Colliners need some mariscos, tacos al pastor, guisados, SOMETHING other than this Qdoba and Chipotle stuff. As Chipotle was formerly owned by MickyD's, and Qdoba currently by Jack-In-The-Crack, I cannot in good conscience call this "Mexican". These are the kind of places that are constantly suffering some salmonella or ecoli outbreak because of the mysterious sourcing of their "produce". Not very good for the price you pay.

as much as i love a good burrito from chipotle, i can't stand to see a chain ranked higher than places like rasta pasta and real treasures of ft. collins.

This is a standard in Fort Collins (and I think Colorado). Its a good place to meet and eat, especially in its perfect location. I've been hooked on their tacos recently. Students get a free drink with their idea too!

Always delicious. And I don't care that guacamole is extra. Doesn't matter. It's real guacamole. No sour cream in it. That's a delicious fact.

We went on a non-crowded Thursday evening. I love Chipotle but this is the worst experience that I've had at a Chipotle. They barely gave me any steak, the pico de gallo was freezing cold, and the customer service was severely lacking. There was a guy cleaning the bathroom and was rude when I tried to do my business. This restaurant is bringing shame to a great name. Please change management or personnel.

The only reason I am even giving this two stars is because of the quality of the food otherwise my experience was terrible. The workers here are incompetent I asked for guacamole on the side and they heaped a ton onto my actual burrito and when I tried to correct them and say "no on the side" they acted like I was an idiot and the one at fault. Terrible customer service I will probably stick to the chipotle on Harmony Rd even though it's a longer drive, they at least have better staff.

The food at chipotle is fine. The customer service at this location is terrible . I spent the last 20 minutes in line trying to order food on my lunch break. There was 2 people sweeping , 2 people prepping for the dinner rush , and one person working the line making food and cashing people out at the end .When you have over 10 people in line, sweeping should NOT be a priority . An apology for the long wait would have been sufficient , but the person in the line was rude, pushy and slopped ingredients into my tacos just about as slow and messy as he possibly could. I asked for lettuce, and he just grabbed a handful of wilted pink lettuce and plopped it on top of my 3 tacos. Gross! -5 stars for customer service. Chipotle rocks for removing GMOs, but they should take another step in the right direction by eliminating the dim witted rude employees from their staff.

Gotta love the Giant Burrito! I love their chicken which is charcoled and crunchy! For some reason though I would still rather go to BC, when craving a Huge Burrito... One thing that is a bit annoying abut this location is the fact that all the tables are bolted to the ground which can make seating precarious at times... Anyways, the staff at this one is super friendly, and you will always get a consistent product... Good for in a pinch!

In FoCo for a couple weeks each summer for my program requirement at CSU. I'm trying to stay within my budget, so packed my lunch this particular school day. My class group was in the mood for Chipotle, so I took my brown bag lunch with intending to purchase a beverage to go with my budget meal. To the dude at the counter who gave me a free medium soda, THANK YOU for making my day. I was a bit exhausted from sunup to sundown school work and living out of a suitcase, so something as small as a free soda and a super happy disposition totally made my day. I promise to buy my lunch next time:)

Chipotle is always good. Anyone that hasn't tried it is out of their mind. This location is just as good but lately they are kind of skimping on the food. Chipotle used to really pack it in so it's kind of sad that might be a thing of the past.

Food is always good. But customer service is so lacking here for many months. I understand its a way to save money, but when ordering a burrito bowl that comes with a tortillas. Don't give client an attitude when I want one. Oh you have to order it at the beginning, how about you ask if I want it at the beginning. Unacceptable attitude by both cashier and the woman making my food.

Just awful. Everything has WAY too much cilantro on it - something I don't understand, real Mexican food should NOT have that much (if any) cilantro in it. I've not had one thing from this place I like - it's generally disgusting to me.

3.5 stars. The burritos and the tacos are ok, everything seems fresh and are decent.Salsas and such are not too bad. I don't go out of my way though to go here usually because it is pretty low on the authenticity scale.
